Sesame Candy Recipe

  • 2017.09.20
Crisp sesame candy, easy to make! There is sesame, sugar and honey.
With that in mind, it's certainly one of the simplest things in the world. What you really need is raw sesame, sugar and honey.
Small amounts of salt add a little spark, like nutmeg, butter and vanilla. A small amount of baking soda can help you create a small amount of air, making brittleness lighter.
You can easily make a batch in 15 minutes and cool it in 15 minutes or 20 minutes. You don't even have to bake sesame. Cooking them in honey and sugar will make them brown enough.
Add a small amount of baking soda to a hot mixture, then pour it out and add a little bit to the mixture, as baking soda reacts with the caramelization of sugar. This creates bubbles of carbon dioxide, which helps produce a slightly lighter, porous texture that makes it brittle and easy to eat.
1. Heat sugar, honey, water, salt, nutmeg: sugar, honey, salt, nutmeg, and water in a small (1/2 quart), heavy pan. Heat with medium heat and stir until smooth mud is formed.
Cook the sesame paste mixture and mix well until the mixture turns to amber caramel, about 5 to 10 minutes.
If you have a candy thermometer, temperature should be 300 ° F. At this point, remove the pan from the fire. Stir in vanilla extract and butter.
Once the butter is completely dissolved into the mixture, add baking soda. After you stir the baking soda, the mixture bubbles, because the baking soda reacts with the caramelization of sugar.
If you don't have Silpat, don't worry, just pour the butter on a metal baking sheet and separate it from the pan with a metal spatula.
Once completely cooled and hardened (about 15-20 minutes), it is crushed.
