Formula For Nutritious Cereal Bar

Has various varieties and nutrition cereal bars products according to the processing methods of the product, raw material characteristics and product form, can be divided into baking, parcel layer and three types of nutritional fortified products, materials and different formula ratio.
 
1.1 grain raw materials
In the formulation of cereal bars, grain accounts for 10% ~ 40%, usually is given priority to with oats, puffed rice flower (m), some products will be according to the local raw materials characteristics and dietary habits, wheat, barley, corn, buckwheat, barley and other grains. Cereal ingredients or in a small amount of cooking oil to be cooked and then added to the cereal bar in a natural state, or by extruding, bulking, etc., into a cereal bar.
1.2 nut ingredients
Nut grain is a very important ingredient in cereal bars, which can improve the taste of cereal bars, make the product sweet and tasty, and improve the nutritional value of the product. The nuts in cereal bars mainly include walnuts, peanuts, bainian, cashews, hazelnuts, etc., which generally account for 10%~30% of the total amount.
1.3 grease material
The main oils used in cereal bars are butter, margarine, etc. The addition of oil can increase the shortness of the product and improve the flavor. Some nutritionally fortified cereal bars add oils rich in unsaturated fats such as flaxseed oil. Lecithin is also added to the ingredients as an emulsifier. The amount of oil is usually 10%~ 15%.
1.4 adhesive
It is mainly used as adhesive for syrup, maltodextrin, starch paste, edible glue, etc., and its effect is to bond grain raw materials, nut granules and other ingredients. The proportion of adhesives is about 30%~40% of the total product.
1.5 antioxidants/preservatives
The cereal bar belongs to the product of low water activity, the product has a certain shelf life. However, in order to prevent oil oxidation, maintain the quality and safety of the product, prolong the shelf life, add preservatives or antioxidants to the product, and its addition amount is 0.05%~ 0.2%.
1.6 other raw materials
The other raw materials used in cereal bar production line include spices, vitamins and mineral nutrients. Some also add instant frozen fruit, dried fruit, candy and chocolate. These materials are added to the products mainly in the form of a sandwich, or directly with grain raw material to make single cereal bars, can give the cereal bars more rich flavor, and improve the nutritional value of the product. Some parcel layer of the cereal bars products will mix chocolate, syrup, honey the daub after spray or garland on the product, the taste of the rich products, and improve the appearance of product. Vitamins and minerals can be fortified by adding dried fruit, beer yeast, wheat sprouts and a variety of nuts, and can be used directly with vitamins and mineral salt enhancer.
